This is a super quick and really, REALLY delicious recipe. Salads aren’t usually my thing in the winter, I reserve them for sunny summer lunches, but this warm, wholesome recipe makes a lovely satisfying dinner.
Ingredients (serves 2)
2 Baby gem lettuces (keep the leaves whole)
Half a radicchio (slice finely)
2 big handfuls of walnuts
1 pear (chopped, with the skin still on)
Blue cheese (I used Castello Danish Blue)
A big slug of white balsamic vinegar
Start by heating some olive oil in a frying pan and throw in your sliced pear with the white balsamic vinegar (I chose Belazu, which is lovely and sweet). The vinegar, once reduced will start to make a delicious syrup, and once this happens you can add the chopped walnuts and a big pinch of sea salt. Keep on the heat until the pears are soft.
On a plate, lay out the baby gem lettuce leaves and shredded radicchio, and sprinkle with the crumbled blue cheese. Once the pear mixture is ready, pour on top, and drizzle with a little extra olive oil.
